20cm sujihiki / slicer.
Perfect for slicing, carving or portioning raw or cooked meats and fish. The high double bevel and fine sharp edge would also make it perfect for preparing fish for sushi and sashimi.
The blade is 200mm over all ( 194mm tip to heel), 40mm tall and is hand forged from Takefu suminagashi clad Blue 2 high carbon steel. The blade flats feature a kurouchi forged finish.
The handle is 145mm long and is constructed from Sambar stag antler with a nickel silver bolster. The antler is specifically chosen to fit the size and weight of the knife, the balance point is just behind my maker mark.
